通过测定洋葱中黄酮类化合物对Fe2+的螯合能力,对DPPH自由基、亚硝酸盐的清除能力,对卵黄脂蛋白脂质过氧化及油脂过氧化的抑制作用,研究了其体外抗氧化活性。结果表明:洋葱中黄酮类化合物对Fe2+具有很强的螯合能力,对DPPH自由基、亚硝酸盐具有良好的清除能力,对卵黄脂蛋白脂质过氧化及油脂过氧化具有明显的抑制作用,即洋葱中黄酮类化合物具有良好的体外抗氧化活性。
